Gol gappe are a popular Indian street food consisting of hollow, crispy, fried puri shells filled with a mixture of ingredients like potatoes, chickpeas, and onions, and then served with a flavored water. Also known by regional names such as pani puri or puchka, they are a crunchy, savory, and tangy snack meant to be eaten whole in one bite. The flavored water, or "pani," is typically a diluted tamarind or mint and coriander chutney.
